Fritters are internationally appreciated. We love them in the Caribbean with Sea Foods. The prawn and salt fish one are commonly sold by people in the community through word of mouth, via social media or at public events.
- 500 g Salt fish
- 2 Carrots
- 1 Lime
- 2 Garlic
- 2 Onion
- 1 Parsley
- 1 Can Condensed milk
- 1 Packet Baking powder
- 1 Hot pepper scotch bonnet Optional
Season your Salt Fish with the lime, parsley, garlic, onion and a little bit of salt (your salt fish was supposed to soak in a big bowl of cold water to remove as much as the salt possible)
Grate the carrots and add it to the seasoned salt fish
Pour in the above mix some milk with the baking soda.
And slowly add the plain flour
Add as much of the milk and the flour until you get a not too liquid mix, as shown on the picture below
Fry your fritters using a big spoon by pouring the mix in hot oil.
